ABOUT Zoodles in Schezwan Sauce RECIPE

Low calorie zucchini noodles tossed with vegetables in a spicy schezwan sauce.

Ingredients Serving: 1

  1. Zucchini 1 medium
  2. Garlic 6 cloves
  3. Onion 1 small
  4. Red bell pepper 1/4
  5. Green bell pepper 1/4
  6. Schezwan sauce 1 teaspoon
  7. Oil 1 teaspoon
  8. Coriander for garnish

Instructions

  1. Using a julienne peeler or spiralizer, make noodles from the yellow zucchini. Slice any leftover bits of zucchini after passing it through spiralizer. Finely chop the garlic. Thinly slice the onions and bell pepper.
  2. In a microwave safe bowl, place the zucchini noodles. Add a teaspoon of water and microwave for 1 minute.
  3. Heat oil in a pan. Add the finely chopped garlic and onion. Stir on high heat for 1 minute.
  4. Add bell peppers and stir on high flame for 30 seconds.
  5. Add the microwaved zoodles, schezwan sauce and toss until well coated. Don't cook the zoodles for more than a few seconds, so that they retain their crunch.
  6. Garnish with fresh coriander.
