ABOUT Sweet Buns RECIPE

I love Sweet Buns especially with tutti frutti in them. These were especially ordered when we visited a irani restaurant for breakfast on a lazy Sunday which was near my house in Mumbai. Now that I'm living away, I was craving for these buns and thought to make them using flax seed meal which makes the buns all the more softer.

Ingredients Serving: 4

  1. 4 cups All Purpose Flour or Maida
  2. 1/4 cup flax seed (alsi) powder
  3. 2 tbsp Sugar
  4. 2-1/4 tsp dry or fast acting yeast
  5. 2 tbsp Softened butter
  6. 300 ml milk+water mixture
  7. 1/4 cup warm water (110 Deg C)
  8. 1 tsp Salt
  9. 2-3 tbsp Tutti Frutti
  10. Oil for greasing
  11. Oven proof Parchment paper/aluminum foil/baking tin

Instructions

  1. Combine yeast, sugar and warm water and keep aside for 10 mins or till it froths. If there is no frothing, then discard as yeast is too old and cannot be used.
  2. Mix wet ingredients in the yeast mix. Add little melted butter, not all. Add the flax seed meal. Mix well.
  3. Combine flour and salt. Add 1 cup of flour at a time to the wet mixture with spatula or by hand. Continue adding butter little at a time.
  4. Dough will be sticky and elastic. Knead it for 10 mins till its smooth. Do not add any flour while kneading. It should retain its stickiness.
  5. Grease a deep bottomed bowl. Apply oil to the dough and keep it in the bowl. Cover with dampened kitchen napkin large enough to cover the bowl. Leave it in warm place to rise for 1-1/2 hours.
  6. Once dough has doubled in size, deflate it (punch it down gently). Add Tutti Frutti to the dough and distribute it evenly.
  7. Take a baking tray. Line it up the parchment paper and make equal sized balls of the dough making sure there are no cracks. Seal the edges if any and place seam side facing down.
  8. Brush them with milk. Cover them and leave in warm place to rise again for 45 minutes.
  9. Before the hour is up, preheat oven to 350 Deg F (about 180 Deg C).
  10. Place the tray in the oven and bake for 30 mins or until golden. Brush them again with milk and melted butter.
