ABOUT Desi Cupcakes RECIPE

Healthier option with whole wheat flour and jaggery.

Ingredients Serving: 6

  1. 200 gms whole wheat flour
  2. 1.5 Tsp Baking Powder
  3. 115 ml oil
  4. 160 gms jaggery, crushed
  5. 3 tbsp water
  6. 100 gms brown sugar
  7. 2 Eggs
  8. 2 Tbsp yoghurt
  9. 2 tsp Cinnamon Powder

Instructions

  1. Sift together flour and baking powder. Keep aside
  2. Line a 12 cups cupcakes tray with cupcake liners.
  3. Preheat oven at 180 degrees Celsius
  4. Mix the jaggery with water and microwave for a minute, the jaggery should dissolve in the water.
  5. In a large bowl, add the oil, brown sugar, yoghurt and cinnamon powder, beat well, now add eggs one at a time and beat till frothy, now add the jaggery mix and beat some more, finally add the flour mixture in three turns, mixing with a spatula after each addition.
  6. Mix till well incorporated, do not over mix.
  7. Pour into the cupcake tray and bake for 25 to 30 minutes or till done.
