ABOUT Banana Oat Bars RECIPE

Bananas are an amazing fruit. All by themselves they can turn into multiple yummy things like creamy, delicious ice cream, and eaten alone they are a satisfying snack. But they also do wonders in baked goods: Bananas take the place of sugar, eggs, and fat in these wondrously chewy, yummy snack bars. These bars have no added sugar, you can whip them up in just a few minutes, and they'll take care of breakfast, after-school snacks, and dessert. Amazing? You bet.

Ingredients Serving: 18

  1. 1 1/3 cup cooking oats
  2. ¼ cup agave (caramelised brown sugar can be used as an alternative in case pure fresh honey or agave is not available)
  3. 2 teaspoons baking powder
  4. 1 teaspoon ground cinnamon
  5. ½ tsp Baking Soda
  6. ½ cup raisins
  7. 1 cup mashed bananas
  8. ¼ cup skimmed milk
  9. 2 Egg Whites
  10. 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Weigh all the ingredients.
  3. Mix together dry ingredients.
  4. In a separate bowl mix together bananas, egg whites, milk and vanilla.
  5. Beat all together till just incorporated- do not over beat or the mixture will turn runny once the natural sugars in the banana break down)
  6. Bake in a 9 x 13 inch pan which has been sprayed with non-stick spray/butter for about 35 minutes.
  7. Place on a wire rack to cool and cut into bars.
  8. You may sprinkle with cinnamon, nuts and sugar, if desired.
