Ingredients Serving: 3

  1. Wheat flour 250gm
  2. Water to knead 160 ml approx
  3. Pinch of salt in dough
  4. Broccoli 400 gm
  5. Carrot 1/2
  6. Onion 1
  7. Green chilli 2
  8. Garlic cloves 2
  9. Oil 1 tbsp
  10. Cumin 1 tsp
  11. Turmeric powder 1/4 tsp
  12. Red chilli powder 1 tsp
  13. Garam masala 1/2 tsp
  14. Kitchen king 1/4 tsp
  15. Aamchur small pinch
  16. Fresh coriander 2 tbsp
  17. Salt to taste

Instructions

  1. Knead soft pliable dough and keep aside.
  2. Heat water in a pan (do not boil) and add broccoli florets to it. Keep aside for 10 mins
  3. Drain the broccoli well and grind in a food processor till it resembles coarse sand
  4. Grate carrot and mix with broccoli
  5. Heat oil in a kadai and add jeera till it crackles
  6. Add chopped onion and mashed garlic, green chilli. Saute till onion is transparent
  7. Add turmeric powder, red chilli powder, salt to taste, garam masala, kitchen king masala and saute for 3-4 mins. Add finely chopped coriander.
  8. Add the broccoli and carrot to this and cook well on low flame for 5-6 mins Cool this mixture
  9. Make 3-4" rotis with the dough. Fill a spoonful of mixture in the center. Pinch up the sides and seal in the middle. Flatten it out with your palm and roll it out again to desired thickness.
  10. Cook on a heated tawa
  11. Best served with curd, pickles, ketchup.
