ABOUT Tapioca Muffins RECIPE

Ingredients Serving: 4

  1. Tapioca (Peeled, Cooked and mashed) – 2 cups
  2. Carrot (Grated) 1/2 cup
  3. Coconut (Grated) 1/2 cup
  4. Green chillis (finely chopped) 3
  5. Shallots (finely chopped) 10
  6. Curry leaves 1 sprig
  7. Eggs (beaten) 3
  8. Vegetable Oil 1/2 Cup
  9. Milk 3 tbsp
  10. Salt as required
  11. Cheddar cheese (grated) 1/2 cup

Instructions

  1. Cook tapioca well with salt and water. Drain water and mash the tapioca nicely.
  2. To this, add carrot, shallots, green chillis, coconut and curry leaves.
  3. Next add in the beaten eggs and oil.
  4. Add milk as required, checking the consistency.
  5. Preheat the oven to 180 degree centigrade.
  6. Grease the muffin cases and pour in the batter.
  7. Bake for 25 minutes.
  8. 3 minutes before taking the muffins out of the oven, add in the grated cheddar cheese, and continue baking.

its a tuber root which is generally a staple food of kerala,so wherever you are staying go look for a store that sells mallu food , you shud get it there
