In downtown Chicago there is a wonderful cafe that sells Spinach arancinis and this dish is my take on that

Ingredients Serving: 5

  1. 2 cups cooked risotto rice
  2. 1 cup baby corn kernels
  3. 2 cups chopped Spinach
  4. 1 cup chopped onions
  5. Few garlic cloves chopped
  6. Pinch of saffron
  7. 1 cup asiago cheese
  8. Salt to taste
  9. 1 cup Maida or all purpose flour
  10. 2 cups bread crumbs for coating
  11. Oregano 2 tablespoons
  12. Few sprigs of rosemary

Instructions

  1. Cook the risotto rice in a pan with water
  2. Add olive oil to a pan and fry the onion and garlic.
  3. After onion turns translucent add corn and spinach
  4. Saute for 5 mins and add the saffron
  5. Add the rice and cheese and mix well
  6. Add oregano and rosemary
  7. Set it to cook for 10 minues
  8. Make the rice balls , make a coating of all purpose flour or maida with water
  9. Dunk the balls in the coating
  10. Coat with bread crumbs and fry in oil in batches
