ABOUT Pupusa (cheese,veggies stuffed cornmeal paratha) RECIPE

A pupusa is a traditional Salvadoran dish made of a thick, handmade corn tortilla. Pupusas are commonly prepared with a variety of fillings.

Ingredients Serving: 3

  1. Salad for topping--
  2. 1/4 cup cabbage sliced
  3. 1medium carrots, thinly sliced
  4. 1 red radish, thinly sliced
  5. 1 tbsp Lime juice
  6. Salt to taste
  7. 1/2 tsp chat masala
  8. 2 tbsp Onion, turnip sliced
  9. For stuffing--
  10. 1/2 cup finely shredded mozzarella
  11. 2 tbsp chopped capsicum
  12. 2 tbsp chopped green onions
  13. 2 tbsp grated carrot
  14. Salt to taste
  15. 1/2 tsp chilly pwd
  16. 1/2 tsp Oregano
  17. For Pupusas:
  18. 3/4 cup cornmeal
  19. 1/4 cup wheat flour
  20. Salt to taste
  21. Lukewarm water
  22. 1 tsp ghee + to cook pupusa

Instructions

  1. For salad in a medium bowl, toss together the cabbage, carrots and radishes salt , chat masala and lemon juice. Keep aside to use later.
  2. For stuffing-- In a bowl add all the ingredients of stuffing and mix well .
  3. Dough for pupusa-- In a medium bowl, whisk together the wheat flour, corn flour and salt. Pour in 1/2 cup of the water, and using your hands, mix the dough until a soft dough forms.
  4. If the dough is too dry and crumbly, add more water, one tablespoon at a time. And if dough is too sticky, add a bit more flour.
  5. Ultimately, the dough should be soft.PatCover the bowl with a clean towel and let it rest for 10-15 minutes.
  6. Coat your hands with ghee and form the dough into 4 balls.
  7. Flatten the balls gently until they're about 1/2-inch thick discs.
  8. Place a tablespoon or two of mozzarella cheese and veggies mixture into the center and wrap the dough around the filling, pinching it to seal completely.
  9. Pat the dough gently, flattening it and alternating hands until it reaches about 1/4-inch thick and about 4-inches in diameter.
  10. Lightly oil a skillet or cast iron skillet and place it over medium heat. Cook the pupusas for 2-3 minutes on each side, until lightly golden brown. It's a good sign when cheese starts to ooze out of the sides and brown "sun spots" appear on the pupusas' surface.
  11. Serve each person one to two pupusas, top each one with a few spoonfuls of salad.
