ABOUT Cheesy Aloo Tikkis (Kids ' Lunchbox Special) RECIPE

It's a pain to decide what to give in your childrens' school tiffin every morning, it has to be appealing, wholesome and satisfying and yes, something 'different' because the kids tire easily of the same routine grub every day. I try and give nutritious food to my son in his lunchbox every day but Fridays are unofficially snacky food days when he is already relaxed before leaving for school as he looks forward to the two-day break ahead over the weekend :) Cheesy Aloo Tikkis are one of his favourite choices for Friday special lunchboxes. This is essentially my mother in law 's recipe which I have worked on with different fillings in the middle, the cheese one being my son' s favourite! Do try this out for your kids, they will love the flavour and the tiffin box will always come back empty!!

Ingredients Serving: 2

  1. Potatoes - 4 - 5
  2. Cheddar Cheese - 2 tbspns, grated
  3. Cottage Cheese / Paneer - 2 tbspns
  4. Cornflour - 2-3 tbspns
  5. Oregano Flakes /Pepper Powder - 3/4 th tspn
  6. Salt - to taste
  7. Refined Veg Oil - 5-6 tbspns for shallow frying

Instructions

  1. Wash the potatoes well and pressure cook for ten minutes on sim.
  2. Cool the cooked potatoes and take off the skin.
  3. Mash the potatoes and add the cornflour, 2 tbspns should be fine, if the potatoes are too mushy, add another tbspn.
  4. Add salt to taste and mix well.
  5. Mix the grated cheese and paneer, adding a little salt, oregano flakes / pepper powder.
  6. Shape into tikkis, make a hollow in the middle and add a little of the the grated cheese and paneer mixture into it, close and shape up.
  7. Dust with a little extra cornflour and pat dry and press them lightly on the sides to make sure that the cheesy mixture does not ooze out while frying.
  8. Heat the oil in a non stick pan and shallow fry the tikkis in batches, till golden brown on both sides.
  9. Drain them on a paper napkin to soak up the excess oil.
  10. Pack in aluminium foil or place just as in the lunchbox with ketchup sachets on the side.
