ABOUT Kashmiri Pulao RECIPE

A classic pulao with mild and sweet flavours. Kashmiri pulao is cooked with saffron milk and mild spices and garnished with lots of fruits and nuts

Ingredients Serving: 4

  1. for cooking rice -
  2. 1 cup Basmati rice
  3. 1 cup milk
  4. 1 Cup water
  5. Few strands of saffron
  6. 1 tbsp ghee
  7. 1 tbsp sugar
  8. salt
  9. spices (2 cardamom,1 star anise,1bayleaf,1stick cinamon,4 cloves)
  10. for pulao -
  11. 1 tbsp ghee
  12. 1 tsp balck cumin seeds
  13. 1 tsp Fennel seeds
  14. 1/2 cup mixed nuts roasted in ghee and chopped (cashew, almonds and raisins)
  15. 1/2 cup chopped parboiled vegetables(carrot,peas)
  16. 2 tbsp paneer cubes cut into small size
  17. 1/2 cup tinned fruits(pineapple,cherry)
  18. 1/2 fresh apple chopped
  19. salt
  20. 1/2 tsp dry ginger powder
  21. 1/2 tsp black pepper powder
  22. 1/2 tsp cardamom powder

Instructions

  1. To prepare rice -
  2. heat ghee in a pan
  3. add rice (soaked for 15 min and then dried on a cloth) and fry for a min
  4. add water, milk,salt, saffron spices and sugar
  5. cover the lid and cook till rice are 95% done
  6. cool to room tempreture
  7. for preparing pulao -
  8. heat ghee in a pan. add spices
  9. add vegetables and fry for a min
  10. add roasted nuts, rice, paneer cubes, fruits, salt, cardamom powder, dry ginger powder,black pepper powder
  11. toss properly
  12. garnish with some fruits and nuts
  13. Serve.
