Ingredients Serving: 4

  1. Chopped Spinach- 1 cup
  2. Carrot ,cabbage both grated - 1/2 cup
  3. sliced onion -2
  4. ginger garlic paste 1 tbs.
  5. Slit green chili 1.
  6. Red Chilli 1 tbs
  7. turmeric powder 1/2 tbs
  8. coriander powder- 1/2 tbsp
  9. Salt to taste.
  10. Shahi jeera - 1/2 tsp
  11. Whole gram masala - 1tsp
  12. garam masala powder- 3/4 tbsp
  13. Oil - 2tbsp
  14. Basmati rice -2 cups

Instructions

  1. Wash and soak the rice for 1/2 hour and keep aside
  2. In a pan pour heat some oil. Add whole gram Masala and shahi jeera
  3. After jeera crackles, add sliced onion and saute for a while.
  4. Add ginger garlic paste and give a quick mix.
  5. add carrot, cabbage, and spinach. Give a nice mix.
  6. Add all the spices given above and mix it well.
  7. Once the raw smell of spices is gone add soaked rice into it.
  8. Give a mix gently. Now add water (for 1 cup of rice, add 1 1/2 cup of water) . Cook on high flame for 10 minutes
  9. Make sure you use a heavy bottom pan.
  10. Cook on medium heat for 5 minutes. Stir to avoid burning
  11. Close the lid and turn off the heat. Keep for 5 to 10 mins in the pan
  12. Spinach pulav ready to be served hot with any raita of your choice.
