ABOUT Fermented Curd Rice with Mango Ginger Pickle RECIPE

An age old recipe that my mon used this during my childhood days for lunch box.On a hot summer day, Fermented curd rice with Mango Ginger pickle is ideal for lunch box. Cooked Rice if fermented overnight in a clay pot and the next day it is mixed with fresh yogurt as thick yogurt rice can be pckeda in the lunch box. It is a body coolant and also a recipe which is loaded with Vitamin B12.

Ingredients Serving: 1

  1. For Fermeneted Rice in claypot
  2. Rice – 1/2 cup
  3. Water – 3 cups
  4. Yogurt – 1.5 tblsp
  5. Salt - 1/2 tsp
  6. For the Mango Ginger Pickle
  7. Mango Ginger - 200 gms
  8. Sesame Oil – 1 tblsp
  9. Mustard – 1 tsp
  10. Chili Powder – 2 tsps
  11. Turmeric –1/2tsp
  12. Salt 3/4 tsp or as needed
  13. Lemon Juice – 20 ml
  14. Hing Powder – 1/2 tsp

Instructions

  1. For Fermented Rice in Claypot
  2. Cook rice on the previous night in a pressure cooker.
  3. Let it come to room temperature
  4. Take a claypot and add the rice.
  5. Soak with drinking water over night.
  6. Next day morning take out the excess water and just retain 1 tblsp of water.
  7. In the same claypot , add fresh yogurt and salt.
  8. Transfer this to a lunch box and pack.
  9. For the Mango Ginger Pickle
  10. Soak the Mango Ginger in water for 15 minutes. Clean the impurities.
  11. Peel the skin and slice into thin round pieces.
  12. Add chili powder, turmeric, salt to the Mango Ginger and mix well
  13. Take a pan and switch on the gas. Add sesame oil, once it is hot , add hing powder.
  14. Add mustard and let it splutter.
  15. Mix it with the Mango Ginger mix.
  16. Add the lemon juice.
  17. Mango Ginger pickle is ready. This pickle does not need any specific margination time and hence can be served immediately. Pack the pickle in a small box as a part of lunch box.

Fermented rice? You meant Pazhanchoru (in tamil) Mango Ginger is this Mango or Ginger?
