ABOUT Tomato Rice with yogurt, Tofu puffs & Fruits RECIPE
This is a kid's friendly lunch box recipe. It has tomato rice, plain yogurt, Fried Tofu Puffs & Grapes. Raita is usually onion raita but it has been avoided to make it kid's friendly.

For the tomato rice
Basmathi Rice - 1/2 cup
Water 1 cup - for the rice
Tomato - 2 big
Water - 1/2 cup for tomato juice
Ghee - 2 tblsp
onion - 1/2
Green chilli - 1/2
Cinnamon - 1 small stick
Cloves - 2
Aniseed - 1 tsp
Bay leaf - 1
Salt - 1/2 tsp
Turmeric - 1/2 tsp
Coriander powder - 1 tsp
chili powder - 1/2 tsp
Curry leaves - 10
Coriander leaves - few
For the tofu puff
Ready made tofu puff - 3 slices
Oil - 1/2 tsp
Salt - to taste
Cumin powder - 1/2 tsp
Others
Fresh yogurt - 1/2 cup
Grapes 1/2 cup
Instructions
Wash and cook the basmathi rice in pressure cooker.
Blend tomatoes with water.
Take a pan, add ghee, bay leaf, cinnamon, clove and aniseed and let the masala infuse into ghee well.
Add onion, curry leaves and saute well.
Add tomato juice, coriander powder, turmeric, chilli powder and salt. Let it cook until the water in the juice evaporates and a thick paste forms
Let the tomato mix cool down.
Meanwhile, wait until the basmati rice is cooked and cool down to room temperature.
Mix the tomato-masala mix and basmati rice. Garnish with Coriander leaves.
Pack it in the box.
Take another box and pack the fresh yogurt.
For the tofu puffs, cut the ready made tofu puffs into big cubes.
Take a pan and add oil.
Add tofu puffs, salt and cumin powder.
Saute for exactly 5 minutes so that they get slight crispy
Allow it to cool down to room temperature.
Pack the tofu puff in another box.
