Amla Thokku with Garlic

Ingredients to make Amla Thokku with Garlic

  • 25 medium size amlas
  • 15 garlic cloves
  • 1 tbsp tamarind
  • 2 tsp fenugreek
  • 1 tsp turmeric powder
  • 2 tsp chilly powder
  • 1 tsp asafoetdia powder
  • 1tbsp powdered jaggery
  • 1 tsp mustard seeds
  • 1/2 tsp urad dal
  • 20 curry leaves
  • 1/4 cup gingely oil
  • salt

How to make Amla Thokku with Garlic

  1. Clean the amlas well and cook them in an idly pot for 10 - 12 minutes.
  2. Allow it to cool completely. Cut them into wedges and remove the seeds.
  3. Soak tamarind in hot water and extract the pulp with 1/2 cup of water.
  4. Dry roast the fenugreek till golden brown and powder it coarsely.
  5. Grind the garlic in a chutney jar without any water.
  6. Heat oil in a kadai and add mustard and urad dal. When it splutters add the curry leaves.
  7. Then add the ground garlic paste and stir it continuously for few seconds.
  8. When the garlic paste has turned to golden brown add the sliced amlas and saute it continuously. Gently mash them with your ladle.
  9. Add turmeric powder, chilly powder to it. Mix them well and add the tamarind extract and required salt.
  10. Let them boil in low flame for 7 to 10 minutes. When it gets thick add the powdered jaggery and asafoetdia powder.
  11. Cook till the oil floats on the top of the thokku and then add the fenugreek powder mix them well and switch off the flame.

My Tip:

Allow the thokku to cool completely and then transfer it to a glass jar. After 1 or 2 days choose refrigeration to increase the shelf life. If you are using the big garlic cloves decrease the measure because it will change the taste of the thokku.
