ABOUT Amla Thokku with Garlic RECIPE

This recipe is an easy way to use up amlas. The simplest and best side dish for our curd rice is our pickles and thokku. Making and storing your own thokku at home is healthy and interesting.

Ingredients Serving: 5

  1. 25 medium size amlas
  2. 15 garlic cloves
  3. 1 tbsp tamarind
  4. 2 tsp fenugreek
  5. 1 tsp turmeric powder
  6. 2 tsp Chilly powder
  7. 1 tsp asafoetdia powder
  8. 1tbsp powdered jaggery
  9. 1 tsp mustard seeds
  10. 1/2 tsp Urad dal
  11. 20 Curry Leaves
  12. 1/4 cup gingely oil
  13. Salt

Instructions

  1. Clean the amlas well and cook them in an idly pot for 10 - 12 minutes.
  2. Allow it to cool completely. Cut them into wedges and remove the seeds.
  3. Soak tamarind in hot water and extract the pulp with 1/2 cup of water.
  4. Dry roast the fenugreek till golden brown and powder it coarsely.
  5. Grind the garlic in a chutney jar without any water.
  6. Heat oil in a kadai and add mustard and urad dal. When it splutters add the curry leaves.
  7. Then add the ground garlic paste and stir it continuously for few seconds.
  8. When the garlic paste has turned to golden brown add the sliced amlas and saute it continuously. Gently mash them with your ladle.
  9. Add turmeric powder, chilly powder to it. Mix them well and add the tamarind extract and required salt.
  10. Let them boil in low flame for 7 to 10 minutes. When it gets thick add the powdered jaggery and asafoetdia powder.
  11. Cook till the oil floats on the top of the thokku and then add the fenugreek powder mix them well and switch off the flame.

very nice recipe..hope the fenugreek does not make it bitter?
