Egg Paneer Fried Rice

Ingredients to make Egg Paneer Fried Rice

  • Basmati rice - 11/2 cup
  • eggs - 2
  • paneer - 100 gms, cut into cubes
  • onion - 2 medium size, chopped
  • tomato - 1 medium, chopped
  • capsicum - 1 small, sliced
  • Green peas - 1/3 cup, Boiled
  • red chilli powder - 1 teaspoon
  • Green chilli - chopped, 2 teaspoon (Optional)
  • tomato Ketchup - 2 tablespoon
  • Black pepper Powder - 1 teaspoon
  • sugar - 1 teaspoon
  • salt to taste
  • Refined oil - 1/2 cup

How to make Egg Paneer Fried Rice

  1. Cook the rice (80%) and drain the water properly.
  2. Spread them in a plate so that they don't get overcooked. Each grain of rice should be distinct and should not be sticky. To get this texture you have to be very careful while cooking the rice.
  3. Now beat eggs with salt and pour it in heated oil. Make scrambled egg and keep aside.
  4. Add little more oil and saute paneer pieces with little salt.
  5. Now heat oil in a pan and add onion, cook till it becomes translucent, next add chopped capsicum.
  6. After 5 minutes add chopped tomato and cook till get mixed.
  7. It's time to add some salt, sugar, black pepper powder, chopped green chilli (optional)and red chilli powder.
  8. Next add tomato ketchup and mix well.
  9. Now add boiled peas and cooked rice. Mixed well with all the spices.
  10. Next goes fried eggs and paneer into this. Keep on mixing.
  11. Taste the salt and switch off the gas, egg paneer fried rice is ready.

My Tip:

You can also use frozen peas, in that case avoid boiling them. Just thaw them before using in the dish.
