Puran Poli

Ingredients to make Puran Poli

  • 250 grams jaggery /Gud
  • 500 grams Whole wheat flour(1/2cup white flour optional)
  • 150 grams chana dal
  • 1 tbsp fennel (saunf) powder
  • 1/2 tsp ginger powder
  • 1/2 tsp nutmeg powder
  • 5-6 green cardamom crushed
  • 2 -3 tablespoons pure ghee
  • 2-3 tablespoons oil
  • 1/2 tsp salt

How to make Puran Poli

  1. Wash Chana Dal well. Pressure cook for 6-8 whistles
  2. Remove cooked daal , strain well and keep aside
  3. Now take pure ghee in a pan or kadai heat it and add the crushed Cardamom seeds.
  4. Add nutmeg and fennel powder
  5. Add ginger powder and mix well
  6. Saute for 2 minutes and add the Jaggery
  7. Add chana Dal to the mixture
  8. Mash all these together with potato masher or with hand
  9. Now knead the flour well adding salt to taste
  10. Knead the flour with ghee soft and light , add water as required .
  11. Keep dough aside
  12. Now make 6-8 portions of the jaggery chana daal mix , this is the Puran
  13. Start rolling the dough into a small poori /Poli
  14. Place one portion of Puran mix on the poori ,close wrapping up the puran in it
  15. Dust little flour and roll lightly
  16. Do the same for each poli
  17. Heat Tava on low flame and shallow fry these Puran Poli one by one with ghee or oil as per choice
  18. Serve hot

My Tip:

Better to wash and cook daal without soaking. Mash the mix well. Use whole wheat flour and a cup of white flour
