Ingredients Serving: 3

  1. eggs - 6
  2. Onions - 2, finely chopped
  3. Ginger - 1 tbsp, minced
  4. Capsicum - 1, finely chopped
  5. Tomatoes - 2, finely chopped
  6. Cumin seeds - 1/2 tsp
  7. Coriander greens - 1 cup, finely chopped
  8. Green chilies - 2 to 3, chopped
  9. Oil - 2 tbsp
  10. Butter - 2 tbsp
  11. Pav bhaji masala - 1 tsp
  12. Salt - to taste
  13. Lemon juice - to sprinkle on before serving
  14. Pav - for accompaniment

Instructions

  1. Heat a pan and add the oil, and 1 tbsp butter, and let it melt, and add the cumin seeds, letting them sputter.
  2. Now add the minced ginger and saute for a few seconds, before tipping in the chopped onion.
  3. Once the onions turn translucent, add the chopped capsicum, green chilies and tomatoes and toss quickly on medium high heat.
  4. Don't fry them, we want the veggies just softened. Now add the pav bhaji masala, and salt, and toss well.
  5. Break the eggs in a large bowl and beat with a fork or spoon.
  6. Add the beaten eggs to the masala, and quickly give it a good mix, scrambling well.
  7. Sprinkle half the chopped coriander, and toss the bhurji until it is scrambled well, and comes together.
  8. Just before taking it off the heat, add the remaining butter, lemon juice and chopped coriander.
  9. Serve with buttered pav or toast.
