Ingredients Serving: 5

  1. 250 gms amla
  2. 2 tbsp chilli powder
  3. 1/2 tbsp Turmeric powder
  4. 1 tsp mustard seeds
  5. a handful of kadipatha
  6. one cup rai or gingelly (til)oil
  7. 1 full pod of garlic
  8. a big piece of ginger (at least 2 inches)
  9. 2 tsp hing powder
  10. 2tbsp achar masala (i use Bramains-available in south indian stores)
  11. 1 tsp roasted methi powder
  12. 1tbsp Salt
  13. 2tbsp vinegar

Instructions

  1. wash and pat dry the Avlas
  2. steam it in a cooker with a stand and without whistle for about 10 mins without the avlas touching the water at the bottom (cool it to room temp)
  3. take a kadai ,heat it well
  4. using a mini chopper finely get the kadipatha,ginger and garlic finely chopped
  5. add oil to the hot kadai and when its hot add in your mustard seeds
  6. lower the flame and add in the finely chopped kadipatha,ginger and garlic and sautee till its slightly brown but not burnt.
  7. turn off the gas and toss in the chilli pd,haldi pd,salt ,methi pd , hing pd and the achar masala
  8. once the steamed avlas have come to room temp, they will be soft, chop it into small piece with a a dry hand and a dry knife
  9. add in abt 2 tbsp vinegar to the masala mix .mix well and toss in the chopped amla pices and mix well
  10. ensure that its well mixed and keep aside to cool
  11. once its cool ,transfer to a clean and dry glass jar!
  12. Tada! yr amla achar (kerala style) is ready
  13. goes well with just curd and rice
