Brinjal Raita

Ingredients to make Brinjal Raita

  • Brinjal - 1
  • chilli powder - 1 tsp
  • Roasted cumin powder - 1 tsp
  • salt to taste
  • curd - 2 cups
  • oil for frying
  • Fresh coriander chopped

How to make Brinjal Raita

  1. Thinly Slice the brinjal and keep it immersed in salt water
  2. Keep oil for deep frying
  3. While the oil is getting heated strain the brinjal slices on a strainer
  4. Now deep fry few peices at a time
  5. Remove on a kitchen towel
  6. Can roast it a little more or keep it this way. Now sprinkle a little salt, red chilli powder on the fried slices
  7. Now prepare the curd
  8. Add the chopped coriander, very little salt,little roasted cumin powder and stir the curd nicely
  9. Now pour it in the vessel you want to serve
  10. Just before having it put the brinjal slices over the curd mix
  11. Sprinkle some more roasted cumin powder all over. And it's ready to eat
