ABOUT Antinunde / Dry fruits with Edible gum roundels: RECIPE

Antinunde is a combination of highly nutritional ingredients with gum Arabic, which is also known as edible gum. Here I have used flax seed, melon seed to increase the value of nutrition other than traditionally used ingredients such as Dates, almonds, cashews, desiccated Coconut, raisins, saffron and nutmeg. These are all ghee fried and mixed in jaggery syrup to make super rich and tasty sweet snack.

Ingredients Serving: 10

  1. Dates -300 grams
  2. Almonds- 100 grams
  3. Cashew -50 grams
  4. Raisins -50 grams
  5. Melon seed – 50 grams
  6. Flax seed – 25 grams
  7. Descicated coconut – 50 grams
  8. Edible gum – 40 to 50 grams
  9. Jaggery – 150 grams
  10. Saffron – 10 strings
  11. Nutmeg – (grated) 1 pinch
  12. Cloves -4
  13. Ghee - 2 to 3 table spoon

Instructions

  1. Chop dates and dry grind this in a small jar of the mixer grinder.
  2. chop almonds and cashews .
  3. Grate nutmeg.
  4. Dry roast saffron then coconut powder for 3-4 minutes, till you get a nice aroma.
  5. Dry roast flax seed .
  6. Heat one teaspoon of ghee and fry one by one , cloves ,almond , cashew , melon seed and raisins.
  7. Put one more teaspoon of ghee to same tawa ,fry those edible gum crystals,until it pops up and becomes fluffy.
  8. Make powder of this by using mixer jar and keep aside.
  9. Lastly, fry those chopped or churned dates and add all these items together in a bowl and keep aside.
  10. Now take jaggery in a small vessel and take ½ a cup of water, boil and sieve this to remove any impurities.
  11. Put this sieved liquid in a thick tawa, in which we have fry all those dry fruits.
  12. Boil this until it reaches one thread consistency.Switch off the gas.
  13. Mix in all those fried items,nutmeg powder,saffron and mix nicely.
  14. Rub your hand with little ghee and start to make laddu’s.
