ABOUT Corn and Oats Open Sandwich and Sprout Salad RECIPE

Lovely open sandwiches made with corn and oats combined with a very healthy conventional but fresh and yummy sprouts salad.

Ingredients Serving: 2

  1. For Open Sandwiches-
  2. Boiled and finely ground corn kernels 1 cup
  3. Oats 1/4 cup
  4. Cottage cheese/paneer grated 3 tablespoon
  5. Chopped coriander leaves 3 tablespoon
  6. Salt to taste
  7. wholewheat bread slices 4-5
  8. Cornflour 2 tablespoon
  9. red chilli powder (Degi Mirch) 1 teaspoon
  10. Garam masala 1/2 teaspoon
  11. Coriander powder 1/2 teaspoon
  12. Mozzarella Cheese grated 1/4th cup
  13. For Garnish-
  14. Italian Seasoning- 1-2 tablespoon
  15. For Sprouts Salad-
  16. Boiled sprouts 1 cup
  17. Salt or to taste 1/2 teaspoon
  18. chaat masala 1 teaspoon
  19. Lemon juice 1/2 teaspoon
  20. chopped Cucumber 3 tablespoon
  21. chopped tomatoes 3 tablespoon
  22. chopped onions 2 tablespoon
  23. Roasted peanuts 2 tablespoon

Instructions

  1. Preheat the oven at grill option at 250 degrees Celsius.
  2. Take 5 wheat bread slices and cut the edges.
  3. Now to prepare the topping: in a bowl mix together- ground corn kernels, paneer, oats, salt, spices and coriander leaves.
  4. Mix them well. (You can keep the ingredients ready a night before or make the topping a night before.)
  5. Now, apply a generous portion on each bread slice. Grate some pizza cheese on top.
  6. Grill this in a baking tray for 5-7 minutes or till done according to your oven temperatures.
  7. Serve or pack in the tiffin with some tomato ketchup.
  8. ForSprouts Salad
  9. I took the ready-made sprouts available at the supermarket.
  10. Pressure cooked them on simmer till two whistles
  11. Drain the water and cool them completely.
  12. You may even prepare this a night before.
  13. In the Morning when packing the lunch box, just mix all the ingredients together and pack them in a leak proof and air -tight tiffin/lunchbox.
