Ingredients Serving: 2

  1. Panini bread - 2
  2. bocconcini - 8
  3. basil leaves - 10-12
  4. salt and pepper to taste
  5. tomato slices - 4
  6. olive oil - 2tspns
  7. chipotle mayo - 2 tbsps
  8. sundried tomatoes - 8 pieces
  9. balsamic vinegar - 1 Tsp

Instructions

  1. Soak sun-dried tomatoes for an hour. Drain and grind them.
  2. Mix with chipotle mayo and keep it aside. Slice the panini bread from the centre.Apply chipotle-sundried tomato sauce on inner sides of the bread. Arrange tomato slices.
  3. Arrange the bocconici cheese in it. Add salt and pepper. Drizzle balsamic vinegar. Drizzle olive oil. Place basil leaves on it.
  4. Grill the panini till grill marks appear. Cut and pack in the tiffin.
