Aloo Paratha and Onion Raita

ABOUT Aloo Paratha and Onion Raita RECIPE

Healthy and delicious parathas stuffed with potato mix and served with onion raita.

Ingredients Serving: 4

  1. For the Dough
  2. 1 and 1/2 cups whole wheat flour
  3. 1/4 tsp Salt
  4. Water as needed
  5. 1 tsp oil
  6. For the stuffing
  7. 2 tbsp Oil
  8. 4 potatoes cut into half
  9. 1/2 tsp cumin seeds
  10. 1 tsp red chilli powder
  11. 1/4 tsp turmeric powder
  12. 1/2 tsp Salt
  13. 1/2 tsp Lemon Juice
  14. 2 tbsp chopped coriander leaves
  15. For the onion raita
  16. 1 cup thick curd
  17. 1 Large Onion finely chopped
  18. 2 tbsp chopped coriander leaves
  19. 1 green chilli deseeded and finely sliced
  20. Salt to taste

Instructions

  1. Heat 3 cups water in a pan, add potatoes and 1/2 tsp salt and boil till the potatoes are cooked.
  2. While the potatoes are getting cooked, we can prepare the raita.
  3. For this, take curd in a bowl, add salt, green chillies, coriander leaves and onions and whisk well.
  4. Onion raita is now ready.
  5. Now that the potatoes are cooked, drain the excess water, remove the skin of the potatoes and mash well with a fork or masher.
  6. Then take a bowl, add flour, 1/2 tsp salt and water (as needed) and knead to form soft but firm dough.
  7. Add oil and knead again for a few minutes.
  8. Close a lid and set aside.
  9. Then heat oil in a pan, add cumin seeds and allow it to sputter.
  10. Then add red chilli powder, turmeric powder, salt and coriander leaves and mix well.
  11. Next add the mashed potatoes and mix well.
  12. Cook for a few minutes till all the ingredients are nicely combined.
  13. Add lemon juice, mix well and switch off the gas.
  14. Allow it to cool and divide it into 8 equal portions
  15. Now take the dough and divide this also into 8 equal balls.
  16. Take 1 ball, roll into a small circle and place one portion of the potato mixture on it.
  17. Carefully cover it with the dough and pinch off the excess.
  18. Press gently to form a patti and roll it to form a circle of uniform thickness.
  19. Then transfer this to a hot tava.
  20. Apply butter or oil and cook the paratha on both sides.
  21. In the same way make all parathas and serve hot with raita.
  22. (This recipe makes 8 parathas.)
