ABOUT Masala Sambhar RECIPE

An essential part of the idli - Dosa - Chutney breakfast or lunch.

Ingredients Serving: 6

  1. Arahar Dal - 1 Cup
  2. Fresh Coriander chopped - 2 Tbsp
  3. Bottle gourd diced - 1 cup
  4. Tomatoes chopped - 1/2 cup
  5. Onions small - 4
  6. Drumsticks cut - 2 or 3
  7. Curry leaves - 8 or 10
  8. Mustard seeds - 1 tsp
  9. Tamarind water - 1/3 to 1/2 cup
  10. Sambhar masala - 3 tbsp
  11. Asafoetida - 2 pinches
  12. Chilli powder - 2 tsp
  13. Turmeric powder - 1/2 tsp
  14. Salt to taste
  15. Oil to fry
  16. Garnish : Whole red chillies - 2 or 3
  17. Fresh Coriander chopped - 1 Tbsp
  18. Desi ghee/Oil - 1 tbsp

Instructions

  1. Wash and soak the Arahar dal for 15 minutes, add it in a pressure cooker with 2 cups water. Wait for 3 whistles.
  2. Simultaneously broil the drumsticks and bottle gourd with 1 cup of water till the vegetables soften.
  3. Put a deep dish pan on high flame, add some oil and lower the flame on medium.
  4. Add in the curry leaves, cumin seeds and asafoetida.
  5. Next put in the tomatoes and the other two vegetables.
  6. Take out the pressure cooked dal and blend, I used a hand blender, till smooth.
  7. Stir in the dal paste after the tomatoes.
  8. Bring to a boil, add in the spices starting with sambhar masala, turmeric, chili powder and salt to taste.
  9. Add in the tamarind water as per taste. I have added 1/2 cup.
  10. Bring to a boil one more time, then cover and keep the flame on low. Stir occasionally.
  11. Add 1 tbsp freshly chopped coriander and stir.
  12. For Garnish: Fry whole red chilies in 1 tbsp ghee and pour over the sambhar
  13. Sprinkle some green coriander and serve hot.
