Ingredients Serving: 5

  1. For the Chicken Marinade: 3 Tbsp - curd
  2. Chicken washed and cut - 1/2 kg
  3. Red Chilli Powder - 1 tsp (as per taste)
  4. Turmeric powder - 1 tsp
  5. Salt to taste
  6. For the Gravy Paste : Soaked cashes 6 - 7 in 1/2 cup of milk
  7. Freshly grounded spices : Cinnamon - 1/2 tsp
  8. Curry leaves - 10 to 12
  9. Cloves - 3
  10. 3 - 4 Tbsp - Oil (as per choice)
  11. Onions large - 2 (finely chopped)
  12. Tomato - 1 (large and chopped)
  13. Ginger garlic paste 2 tsp (home made)
  14. Coriander powder - 1 tsp
  15. Black pepper powder - 3 to 4 tsp (adjust as per taste)
  16. Cumin powder - 2 tsp
  17. Lemon fresh coriander and parsley for garnishing

Instructions

  1. Marinate the chicken in curd, chili powder, turmeric and salt. The longer the marination the better is the taste.
  2. Make a paste of the soaked cashews in milk. Keep aside.
  3. In a deep sauce pan, add in the oil. Add in the chopped onions and saute till pinkish brown in texture.
  4. Add ginger garlic paste and continue cooking on a medium flame.
  5. Add in the coriander powder, black pepper and cumin powder.
  6. Add in the chopped tomato and let it cook for a few minutes.
  7. As soon as the oil separates turn off the heat and cool. Grind and keep aside.
  8. In the same deep sauce pan, add in 1 tbsp of oil and add in the marinated chicken.
  9. Cover and let it cook for 5 minutes, add in the grounded spices along with the cashew paste.
  10. Cook for another 5 minutes then add in the blended gravy.
  11. Add water as per the gravy requirement. I added 1 cup.
  12. Cook covered till the chicken pieces are tender. Add salt.
  13. Serve with a garnish of lemon wedges, fresh coriander and twig of parsley.
