A fantastic twist to regular paav bhaji by the legendary Tarla Dalal ji. One more option for finger food.

Ingredients Serving: 6

  1. Finely chopped onion 1 cup
  2. Finely chopped tomatoes 2 cup
  3. Bottle gourd 1 medium sized
  4. Cauliflower 1
  5. Carrot 4
  6. Ghee 1 tbsp
  7. butter
  8. Salt 1+1/2 tsp
  9. Paav bhaji powder 2 tsp
  10. Paav buns

Instructions

  1. Roughly chop bottle gourd, cauliflower and carrots.
  2. Give three whistles with half cup water and 1 tsp salt.
  3. In a wok heat ghee and 1 tbsp butter. Add onions and roast till golden.
  4. Add tomatoes and 1/2 tsp salt. Cook till masala starts leaving oil
  5. Add paav bhaji masala dissolved in 2 tbsp water.
  6. Grind together cooked onion tomato masala and boiled vegetables.
  7. Put in wok again and cook on low heat with more butter for 15 minutes. Bhaji is ready.
  8. Cut paav buns into bite size croutons.
  9. Heat a non stick pan. Melt butter and toss croutons in butter for a while.
  10. Arrange croutons in saute sticks and serve with bhaji.
  11. Happy cooking
