ABOUT Mutton Roganjosh RECIPE

Traditional mutton dish from Kashmir valley. Soft buttery chicken in a creamy gravy

Ingredients Serving: 2

  1. Mutton 1/4 kg.
  2. Onions 1/4 kg -thinly sliced
  3. Ginger garlic paste 2 tsp
  4. Fennel (saunf) powder 1tsp
  5. Kashmiri chilli powder - 3 tsp
  6. Asafoetida (hing) powder -1tsp
  7. Beaten curd 1 cup
  8. Salt to taste
  9. Oil 2-3tbsp

Instructions

  1. Heat oil in kadhai. Add onions and fry till golden brown. Add whole masala i.e 2 sticks cinnamon, 4 - 5 cloves, 2-3 black cardamom, 1bay leaf.
  2. Add mutton and stir fry till it changes colour to light brown.
  3. Add water and cook the mutton for 45 minutes on the low flame. (Alternatively, you can also cook mutton in a pressure cooker).
  4. After mutton is cooked add powered masala after mixing with water. Add salt and beaten curd and boil till gravy thickens.
  5. Garnish with coriander leaves. Serve hot.
