ABOUT Paneer Jalfrezi (Restaurant style) RECIPE

A quick stir fry of paneer, bell peppers, onion and tomato in a spicy tomato paste.

Ingredients Serving: 6

  1. Paneer (cut into 2 inch by ½ inch long pieces) - 250 gms
  2. Onion (Large thinly sliced) - 1
  3. Ginger-Garlic Paste - 1 Tbsp
  4. Green Chillies - 2 or 3
  5. 1 Green Capsicum deseeded and sliced
  6. 1 Red Bell Pepper deseeded and sliced
  7. 1 large Tomato deseeded and sliced
  8. 1 cup - Tomato Puree
  9. 1 tbsp - Tomato Ketchup
  10. ½ tsp - Sugar
  11. Juice of 1/2 a lime
  12. 1 tbsp - Coriander Leaves (finely chopped)
  13. 1 tbsp - Oil
  14. Salt to taste
  15. ĵ tsp - Turmeric Powder
  16. ½ tsp - Red Chilli Powder
  17. 1 ½ heaped tsp - Dhania Powder
  18. ĵ tsp - Garam Masala
  19. 1 tbsp - Kasuri Methi/Dried Fenugreek Leaves
  20. 1 tsp - Cumin Seeds

Instructions

  1. Heat oil in a pan and add cumin seeds. When cumin starts to sizzle and turn deep brown, add sliced onions and saute for 2 minutes.
  2. Next add ginger-garlic paste and green chilies and fry for 2 minutes on medium flame until the raw smell disappears.
  3. Mix in turmeric powder, red chili powder, coriander powder and crushed kasuri methi and give it a quick stir.
  4. Add tomato puree, tomato ketchup, sugar and salt to taste and cook it for 4-5 minutes on a medium flame, stirring in between.
  5. Toss in bell pepper and cook for a minute. Add paneer pieces and tomato slices and gently stir them so that each paneer pieces is nicely coated with the masala. Please take care not to break the paneer pieces. Cook for 2 minutes.
  6. Turn off the gas and add garam masala, finely chopped coriander leaves and lime juice and mix them well.
  7. Let it rest covered for 5 minutes for all the flavours to blend.
