Anda Funda!

Ingredients to make Anda Funda!

  • 3 tablespoons - yogurt
  • Freshly grated ginger - 1 Tbsp
  • Freshly chopped garlic - 1 Tbsp
  • Ajwain - 1/2 tsp (Carrom Seeds)
  • coriander powder - 1 tsp
  • 1 tsp - Haldi/ turmeric
  • Green chili paste - 1 tsp
  • fried onions - 1.5 tbsp
  • Black vinegar - 1 tbsp
  • A little soya sauce - 1 tsp
  • Crushed red chillies - 2
  • A little - kasuri methi
  • A handful - mustard seeds
  • Urad Dal - 1 tsp (Split black gram)
  • green chillies slit - 2
  • 10 to 12 - curry leaves
  • a pinch of Heeng/asafoetida
  • tomato puree - 2 Tbsp
  • coconut Milk - 2 Tbsp
  • Fresh Corriander for Garnish
  • salt (varies as per your taste)
  • 4 boiled eggs

How to make Anda Funda!

  1. Boil Eggs - Peel and keep aside
  2. For the Masala: Mix the yogurt, ginger, garlic ajwain, coriander powder, haldi, green chili paste, fried onions, vinegar, soya sauce, crushed red chilies, kasuri methi and salt. Keep aside.
  3. Heat oil in a pan. When it is hot add the hing, mustard seeds, urad dal, green chilies and curry leaves.
  4. Once they sizzle and the eggs and the masala you have prepared and fry on a high flame for a few minutes. Keep stirring to ensure masala does not burn.
  5. Add the tomato purée and coconut milk. Mix well and bring the thick mixture to a boil.
  6. Cover and cook on low flame for 15 minutes.
  7. Garnish with coriander. Serve hot.
