ABOUT Anda Funda! RECIPE

This can be a party food or comfort food or something to make for the kids at parties as all kids love boiled eggs! It is a fusion of north - south flavors and has become a favorite among my friends!

Ingredients Serving: 2

  1. 3 tablespoons - yogurt
  2. Freshly grated ginger - 1 Tbsp
  3. Freshly chopped garlic - 1 Tbsp
  4. Ajwain - 1/2 tsp (Carrom Seeds)
  5. Coriander powder - 1 tsp
  6. 1 tsp - Haldi/ turmeric
  7. Green chili paste - 1 tsp
  8. fried onions - 1.5 tbsp
  9. Black vinegar - 1 tbsp
  10. A little soya sauce - 1 tsp
  11. Crushed red chillies - 2
  12. A little - kasuri methi
  13. A handful - mustard seeds
  14. Urad Dal - 1 tsp (Split Black gram)
  15. Green Chillies slit - 2
  16. 10 to 12 - curry leaves
  17. a pinch of Heeng/Asafoetida
  18. Tomato puree - 2 Tbsp
  19. Coconut Milk - 2 Tbsp
  20. Fresh Corriander for Garnish
  21. salt (varies as per your taste)
  22. 4 boiled eggs

Instructions

  1. Boil Eggs - Peel and keep aside
  2. For the Masala: Mix the yogurt, ginger, garlic ajwain, coriander powder, haldi, green chili paste, fried onions, vinegar, soya sauce, crushed red chilies, kasuri methi and salt. Keep aside.
  3. Heat oil in a pan. When it is hot add the hing, mustard seeds, urad dal, green chilies and curry leaves.
  4. Once they sizzle and the eggs and the masala you have prepared and fry on a high flame for a few minutes. Keep stirring to ensure masala does not burn.
  5. Add the tomato purée and coconut milk. Mix well and bring the thick mixture to a boil.
  6. Cover and cook on low flame for 15 minutes.
  7. Garnish with coriander. Serve hot.
