ABOUT Hummus & Falafel with cream crackers & Salad RECIPE

Falafel makes a great appetizer when paired with hummus for dipping. For a quick meal, serve atop a salad or inside pita bread with lettuce, tomatoes, and a drizzle of tahini. Idea courtesy Google.

Ingredients Serving: 4

  1. To make hummus: kabuli chana - 1 cup (soaked overnight)
  2. Garlic flakes - 4 or 5
  3. Tahini - 1 tsp
  4. To make tahini :
  5. (roasted ground & hulled) sesame seeds - 1 cup
  6. Olive oil - 4 tbsp
  7. Lemon juice - 4 tsp
  8. Jeera powder - 1 tsp
  9. Lalmirch powder/ Red chili ppowder - 1 or 2 tsp
  10. Few Parsley sprigs or Hara dhania/Coriander
  11. Black pepper powder & Salt to taste
  12. To make Falafel:
  13. kabuli chana (soaked overnight boiled with salt) - 1 cup
  14. Onion - 1 (chopped)
  15. red chili powder - 1/2 tsp
  16. Dhania Powder and Garlic flakes - 1 tsp each
  17. Jeera powder - 2 tsp
  18. Green chili chopped - 1 tsp
  19. Parsley or Hara dhania/Coriander - as per choice
  20. Lemon juice and Olive oil - 2 tsp each
  21. Bread crumbs - 1/2 cup

Instructions

  1. To make Tahini: Roast white sesame seeds for a while. After cooling grind it in a mixer, add in olive oil to get an oily paste made from toasted ground hulled sesame seeds.
  2. Hummus: In a pressure cooker boil kabuli chana. Add salt & a pinch of soda bicarbonate. Cook for about few whistles till it gets softened. Remove chana. Don't discard the water.
  3. In a mixer put the above mentioned ingredients along with boiled chana except olive oil. Pulse it & slowly add olive oil. Pulse again. Add olive oil till it forms a thick paste. Also add the chana water to adjust the consistency of hummus.
  4. Take it out in a serving bowl. Garnish with chopped parsley and lal mirch powder.
  5. To make the Falafel : In a bowl crush the boiled chana with a spoon. In a mixer pulse onion, garlic & hari mirchi.
  6. Mix this with Chana. Add all the falafel masalas. Add bread crumbs not all at once. Add slowly to make a dense mixture to easily make Falafel.
  7. Take a small portion of it. Make small round balls, flatten it. Shallow fry it in a pan or tawa, with oil.
  8. Serve hot with Cream cracker biscuits, Salads like lettuce leaves, Carrots & Cucumbers.
  9. Enjoy Healthy Hummus & Falafel.
