ABOUT Open cheese sandwich with pesto RECIPE

Inspired from 'Cheeliza', open sandwich.

Ingredients Serving: 2

  1. Whole wheat flour - 1 cup
  2. 1 tsp - active dry yeast
  3. 1 tsp - sugar
  4. Salt as per taste
  5. Oil - 1/2 cup
  6. Milk powder - 1 tbsp
  7. Basil leaves - 1/2 cup
  8. Cheese - 1 cube
  9. Pine nuts - 1/4 cup
  10. Green chilies - 2
  11. Sesame seeds - 2 to 3 tsp
  12. Bell peppers - 1/2 cup (green yellow & red)
  13. Baby corn -
  14. Olives - 1 tsp (optional)
  15. Jalapeno - 1 tsp (optiona)l
  16. Mozarella cheese - 1/2 cup
  17. Amul cheese spread 3-4 tbsp
  18. Oregano - 2 tbsp
  19. Water to knead the dough only

Instructions

  1. Take some warm water in a bowl. Add in yeast and sugar and allow it to ferment for 10-15 minutes. Once it froths, use it to make the dough.
  2. Take wheat flour, add in proofed yeast, salt to taste, oil, milk powder and knead the dough.
  3. Cover and keep in a warm place till the dough doubles in size. (30-45 minutes)
  4. Knead the dough properly after it doubles, grease the oven proof plate and place the dough on it. (I flattened it in a mould)
  5. Give milk wash and again keep it for proofing for 30 - 45 minutes. Once it doubles in size again, bake it in pre heated oven at 180°C for 10 minutes.
  6. For making pesto sauce: In a mixer jar add washed basil leaves, pine nuts, sesame seeds, cheese, salt, oil and green chilies. (you can add garlic cloves also)
  7. Churn till u get a smooth paste, add more oil or water to make it a smooth paste.
  8. Allow the bread to cool, apply butter and then pesto sauce.
  9. Add chopped bell peppers, parboiled baby corns, olives, jalapenos. (I don't use jalapeno when I make this for my daughter).
  10. Grate mozarella on top and spread cheese spread on top. (I completely cover it)
  11. Sprinkle oregano and slightly roasted sesame seeds.
  12. Now bake it in pre heated oven at 200°C for 10 - 15 minutes. Or it turns slightly brown.
