ABOUT Cluster Beans Thoran RECIPE

Cluster Beans Stir Fry is a healthy vegetarian side dish which goes well with rice. The guar beans or cluster beans are rich in proteins, soluble fiber, vitamins and iron. They help in controlling blood sugar levels.

Ingredients Serving: 2

  1. Cluster Beans (finely chopped) 1cup
  2. Turmeric powder 1/2 tsp
  3. Chilli Powder 1/2 tsp
  4. Mustard seeds 1tsp
  5. Dry Red Chillies 2
  6. Curry leaves 1 sprig
  7. Garlic (finely chopped) 1tbsp
  8. Cumin Powder 1/2 Tsp
  9. Grated Coconut 1/2 cup
  10. water 1/4 cup
  11. Salt to taste
  12. Coconut oil 1tbsp

Instructions

  1. Cook the cluster beans in a wide pan adding turmeric powder, chilli powder, salt and water till they turn soft.
  2. Combine grated coconut with chopped garlic and cumin powder.Add this to the cooked cluster beans and cover cook for 2 minutes. Mix everything well.
  3. Heat oil in a pan. Splutter mustard seeds, add dry red chiilies and curry leaves.
  4. Add the beans coconut mixture to the tempered items and mix well.
  5. Serve hot with rice and other side dishes.
