Vegetable Poha Patties

Ingredients to make Vegetable Poha Patties

  • Boiled potatoes - 6
  • carrots: 2 small size, grated
  • capsicum - 1 medium size, chopped finely
  • French beans: 10 to 11, chopped finely
  • onions - 2 small size, chopped finely
  • ginger/Garlic -1 tsp each, grated
  • green chillies - as many as you like
  • coriander leaves - finely chopped with stems
  • Kasuri methi - 2 tbsps
  • oil: for shallow frying
  • salt to taste
  • red chilli powder - 1 tsp
  • coriander powder: 2 tsps
  • Garam masala -1/2 tsp
  • Amchoor- 1 tsp
  • Poha - 1 1/4th cup (wash and soak it for 5 minutes or till it's soft)
  • Rice flour -2 tbsps (I added for extra crispness and texture.)

How to make Vegetable Poha Patties

  1. Mash the potatoes really well. Add all the ingredients mentioned above except oil and mash really well with your hands till it resembles a dough.
  2. Give a desired shaped.
  3. Heat oil in a pan and shallow fry both sides till it's golden brown and crisp.
  4. Serve it with green chutney/ketchup/onion rings or radish and beetroot salad.
