Dhokla in Idli moulds. The superb taste remains the same. Melt in mouth, spongy dhokla idlis are just right to kickstart your day.

Ingredients Serving: 5

  1. besan 2 cups
  2. ginger paste a tsp
  3. turmeric a tsp
  4. salt to taste
  5. oil a tbsp
  6. Green chillies chopped 3
  7. coriander leaves chopped a fistful
  8. Eno fruit salt 1 1/2 tbsp
  9. Citric acid a pinch
  10. asafoetida a pinch
  11. Grated coconut for the garnish
  12. For the tempering -
  13. Black mustard seeds a tbsp
  14. Curry leaves few
  15. Dry red chillies 4


  1. Make a smooth lumpfree batter with all the ingredients except the eno.
  2. The batter should be semi thick.
  3. Heat a vessel with water( 1/4 th of it)
  4. Grease the idli moulds.
  5. Add eno to the batter and give a light mix. Don't mix too much. Just fold in lightly.
  6. Place the idli stand in the vessel.
  7. They are done in 10 mins.
  8. After 10 mins, just check them with a skewer and if done, switch off the flame and don't remove the lid.
  9. Wait for 10 mins more and only then remove the lid.
  10. Temper these delish dhokla idlis and serve garnished with grated coconut and any chutney of your choice.
