ABOUT Kothambir wadi RECIPE

Kothambir wadi is a crispy crunchy snack made with corriander leaves. Its very easy to make and tastes divine.

Ingredients Serving: 6

  1. 1/2 cup fresh coriander leaves finely chopped
  2. 1 cup (200 gms) chickpea flour
  3. 1 tsp sugar
  4. 1 tsp Chilli Powder
  5. 1/4 tsp turmeric powder
  6. 1 tsp cumin powder
  7. 2 tbsp rice flour
  8. 1 tbsp of grated coconut
  9. 1 finely chopped green chilli
  10. Juice from half a lime
  11. Little less than 1/2 cup water for kneading
  12. Oil for frying +1 tbsp
  13. Salt to taste

Instructions

  1. In a large vessel add in coriander leaves,chickpea flour, rice flour,green chilli,cumin seeds,red chili powder,turmeric powder, salt, grated coconut,sugar,lemon juice and 1 tbsp oil.
  2. Mix this well and add water enough to make a soft dough.
  3. Let this rest for 2 mins.
  4. Grease a steamer plate and press down the dough in a circular form.
  5. Steam this for 10 mins.
  6. Once cooked. Cut into cubes.
  7. Heat oil in a deep skillet and fry the steamed cubes till golden brown.
  8. Serve hot with a cup of tea.
