Chocolate Salami

Ingredients to make Chocolate Salami

  • 112 grams or 1/2 cups unsalted butter
  • 75 grams or 6 tablespoons granulated sugar
  • 6 tbsps cocoa
  • 60 ml or 1/4 cup milk
  • 10 - 12 digestive biscuits
  • 1/4 cup shelled and chopped pistachios
  • 1/4 cup dried cranberries
  • 1 tsp vanilla extract

How to make Chocolate Salami

  1. Crush your biscuits roughly into small pieces by hand or food processor.
  2. Add the pistachios and cranberries and mix well. Keep aside.
  3. In a saucepan, melt the butter .
  4. Add the sugar and whisk until it melts.
  5. Add the cocoa and heat while mixing until smooth.
  6. Add the milk and stir until smooth.
  7. Pour this chocolate mixture over the biscuits, cranberries and pistachios, and mix well.
  8. Divide the mixture into two halves and place each on cling wrap.
  9. Roll each into a log using the cling wrap. Flatten the sides (round ends)
  10. Wrap in cling wrap and chill for 3 -4 hours
  11. Unwrap , dust with cocoa or icing sugar and slice !

My Tip:

Make your salami with your choice of dried fruits and nuts! These can be stored refrigerated for up to 2 weeks . Wrap in parchment or butter paper . I got two logs of about 3 cms diameter and 20 cms length with this recipe. That gave me about 40 cookies. If your sugar is thickening but not melting , just carry on with the cocoa and milk. Keep heating and stirring until it melts.
