Italian Walnut and Cinnamon Biscotti

ABOUT Italian Walnut and Cinnamon Biscotti RECIPE

I never knew baking biscottis at home is so easy until I tried it. These come out so delicious. I simply loved the aroma it filled my house with.

Ingredients Serving: 3

  1. All Purpose Flour - 1/2 cup
  2. Wholewheat flour - 3/4th cup
  3. Walnuts - 1/2 cup chopped
  4. Baking Soda - 1/4th tsp
  5. Baking powder - 1/2 tsp
  6. Oil - 1/4th cup (i used olive oil)
  7. Caster sugar - 1/2 cup
  8. Egg - 1 (beaten)
  9. Cinnamon powder -1/2 tsp
  10. Pure Vanilla extract - 1/2 tsp

Instructions

  1. Mix all dry ingredients except sugar together in a glass bowl till everything incorporates well.
  2. In another mixing bowl take sugar and oil. Beat till sugar dissolves completely. I used an egg beater for this. Took me 7 to 8 minutes.
  3. Add egg and beat again for another 5 mins or till mixture looks light, flowy and sugar completely dissolves. Add vanilla extract and mix. Fold in the walnuts.
  4. Preheat the oven. Line baking tray with a cookie sheet/foil.
  5. Now add dry ingredients in three batches mixing each time well.
  6. Finally take out the mixture on a floured work surface and knead to a dough. The dough should be soft and not sticky at all or dry. Make a log with the dough approx one inch thickness.
  7. Bake for 30-35 mins at 160 degrees C or until knife inserted in the centre comes out clean. Every oven has a different setting. So please keep checking.
  8. Take out and allow to cool for 10-15 mins.
  9. Cut with a sharp knife in slices in desired thickness and rearrange on the baking tray for second baking.
  10. If it breaks while cutting place the logs in the freezer for 10 mins and then cut.
  11. Bake again for 7 to 8 mins at 160 C then turn them and bake again for another 7 to 8 mins.
  12. Allow to cool. As they will turn crisp after cooling only.
  13. Enjoy it with tea/coffee/milk.
  14. You can bake these with All purpose flour alone. I added more of Wholewheat flour to make them healthier
