Italian Pasta Soup

Ingredients to make Italian Pasta Soup

  • olive oil - 3 tbsp
  • onion - 1 medium size, sliced thinly
  • garlic - 7 cloves minced
  • Broccoli - few florets, chopped finely
  • Button mushrooms- handful, chopped
  • Bell peppers - half a cup, chopped finely (red and yellow pepper)
  • Sweet corn kernels - handful
  • Pasta - around 20 elbow pasta or whatever you prefer
  • Pasta/Pizza sauce - 4 heaped tbsps
  • Black peppercorns -7 to 8, ground well
  • salt to taste
  • Dried Thyme - 1 tsp
  • Dried Rosemary - 1/2 tsp
  • Bayleaf - 1
  • Red pepper flakes as per taste
  • coriander leaves - handful
  • lemon juice -1 tbsp
  • sugar as required or 1 tsp
  • water or pasta stock - 5 cups

How to make Italian Pasta Soup

  1. In 2 tbsps olive oil, add bayleaf. After few seconds sauté garlic till sticky. Quickly add onion and salt. Sauté till translucent.
  2. Switch off the flame. Discard bayleaf and blend the onions to a smooth purée. Add water to get a smooth purée. Keep aside
  3. Boil pasta as per instructions and retain the stock.
  4. In the same wok, add a tbsp of oil, sauté all the veggies for 3 to 4 mins. Add the seasoning along with the veggies.
  5. Add pasta sauce and mix well. Then add onion purée and pasta stock. Add more water if required.
  6. Bring it to boil then lower the flame and cook for 15 to 20 mins on medium flame. Check for seasoning. Add sugar if required.
  7. Add pasta when you have to serve. Finish it with coriander leaves and lemon juice.
