Jumbo deep fried sandwich with mashed potato covering.

Ingredients Serving: 4

  1. Bread slices 4
  2. Butter 1 tbsp
  3. Cottage cheese 50 gms
  4. Ketchup 1 tbsp
  5. Tomato 4 slices
  6. Mint coriander chutney 1 tbsp
  7. Cucumber 4 to 6 slices
  8. Boiled potatoes 6
  9. Dried bread crumbs 3/4th cup
  10. Salt 1 tsp
  11. Red chilli powder 1 tsp
  12. Chat masala 1 tsp
  13. Garam masala 1 tsp
  14. Oil to deep fry

Instructions

  1. Grate boiled potatoes. Add bread crumbs, salt, red chili powder, chaat masala and garam masala. Mix well.
  2. Prepare sandwich. Take a bread slice. Spread ketchup evenly on this slice. Arrange tomato slices over ketchup and cover with second bread slice. Butter second bread slice on top and arrange sliced cottage cheese . Season cheese with salt and pepper. Cover cheese with third bread slice.
  3. Spread mint coriander chutney evenly on third slice. Arrange cucumber slices on mint chutney slice and cover with fourth bread slice. Now cover the whole sandwich( all six sides) with potato mix. Make sure there is no crack in potato covering else oil will get into the sandwich while deep frying. My covering is around half centimeter thick.
  4. Make a medium thick slurry of all purpose flour with water. Put oil in a big wok to heat. Apply this slurry over jumbo potato covered sandwich with the help of a silicon brush.
  5. Dust whole sandwich with semolina. Carefully put this sandwich in hot oil. Be cautious hot oil may spill so take help of a spatula to put sandwich in hot oil. Pour hot oil on top of the sandwich too with a ladle. After a minute or two flip the sandwich carefully.
  6. Let it cook for two minutes and then drain onto a plate. These are half done now. After 15 minutes heat oil again and deep fry this sandwich till crisp and golden.
  7. Drain onto a kitchen towel. Cut into four pieces in a manner that each piece has layers of all four slices. Serve hot with tea or coffee.
