ABOUT Postor bora (poppy seed fritters) RECIPE

A traditional Bengali dish, white poppy seed paste is shallow fried into delicious addictive fritters.

Ingredients Serving: 4

  1. Posto or white poppy seeds: 1/2 cup
  2. Onion (very finely chopped): 1/4 cup
  3. Green chilies (finely chopped): 1-2 tbsp (as per choice)
  4. Kalonji or Onion seeds or kalo jire: 1/2 tsp
  5. Rice flour: 1-2 tbsp
  6. Salt to taste
  7. Mustard oil to shallow fry
  8. Water to make paste

Instructions

  1. Soak the poppy seeds with hot water for 1 hr. Strain and grind to smooth paste. Or the poppy seeds can be ground dry (using a spice grinder or coffee grinder), then water can be added to make paste.
  2. In a bowl take poppy seed paste, finely chopped onion, green chilies, kalo jire (onion seeds), salt and rice flour and mix well. The rice flour works as a binder so adjust the amount accordingly. Try not to add too much.
  3. In a heavy bottom frying pan heat oil, preferably mustard oil. When the oil is hot place small dollops of poppy seed batter, flatten it with the back of the spoon or a spatula. Fry till brown on both sides. Serve hot with steaming hot rice.
  4. This will make 14-15 bora or round fritters.
