ABOUT Vanjaram Vepudu/Varuval RECIPE

Vanjaram fish fry or vanjaram vepudu is spicy fish fry. Vepudu means to fry. It is marinated with spices and shallots and pan fried until toasted on both sides.

Ingredients Serving: 3

  1. 3 large pieces Vanjaram fish /King Mackerel
  2. 1/4 cup small onions
  3. 1 1/2 tsp kashmiri red chilli powder
  4. 1 tsp turmeric powder
  5. 1 1/4 tsp pepper powder
  6. 1 inch ginger
  7. 3-4 cloves garlic
  8. Salt to taste

Instructions

  1. Grind small onions, kashmiri red chilly powder, turmeric powder, pepper powder, ginger , garlic and salt to a fine paste. Apply this paste to the fish on all sides evenly using your hands. Rest it for 1 -2 hours in the fridge.
  2. Clean the fish. Use fork and prick all the sides of the fish to make tiny holes so that the marination gets in deeper.
  3. Heat oil in a wide pan. Place the marinated pieces on it. Cook on both sides until it is toasted and turns brown. Serve hot with sliced onions.
