ABOUT Corn Chowder with Pasta RECIPE

Chowder is a milk based soup. This is an ultimate comfort food and it is delicious to the core. The flavours of garlic, thyme, corn and veggies blend in so beautifully. It's ready in a jiffy and is quite a hearty meal.

Ingredients Serving: 2

  1. Sweet Corn Kernels: 1 cup
  2. Milk:1.5 cups
  3. Olive oil: 2 tbsps
  4. Garlic: 5 cloves, minced
  5. Onion: 1 small size, finely chopped
  6. Carrots: 1 small, finely chopped
  7. Capsicum: 1 small, finely chopped
  8. Button Mushrooms: 8 to 9, chopped (retain the stems)
  9. Black olives: 4 to 5, chopped
  10. Pasta: 12 to 15 elbow pasta (you can use whichever you like)
  11. Dried Thyme: 1 tsp
  12. All Purpose Flour: 1/2 tsp
  13. Salt to taste
  14. Black peppercorn: 7 to 8, ground to a fine powder
  15. Chilli flakes: 1/2 tsp or as per taste
  16. Pasta stock: approx 1.5 cups
  17. Lemon juice: just a few drops
  18. Coriander leaves: handful

Instructions

  1. Boil pasta as per instructions and retain the stock.
  2. In a preheated olive oil, add garlic and saute till sticky. Now add onion and saute till translucent.
  3. Add the veggies except corn kernels. Season it with salt and thyme.
  4. Saute till they start releasing all the juices.
  5. Sprinkle flour on the veggies and saute for ten seconds.
  6. Now add milk and bring it to boil. Lower the flame and stir occasionally so that it does not stick to the bottom.
  7. Add corn kernels, olives, all the seasoning and pasta stock.
  8. Cook till you achieve the desired consistency. Check for seasoning.
  9. Add pasta and give a nice mix. Switch off the flame.
  10. Finish it with lemon juice and coriander leaves. Cover it for 5 minutes.
  11. Serve hot with garlic bread toast.
