ABOUT White Chocolate & Raspberry Semifreddo RECIPE

'Semifreddo' is an Italian dessert. Semifreddo means 'half cold'. It is frozen but because it has whipped egg whites and whipped cream folded into it, it does freeze up quite as hard as ice cream. It is a cheat's ice cream. It's deliciously creamy and slightly airy enough to feel it dissipate on your tongue. It's effortless and a heart & soul satisfying dessert.

Ingredients Serving: 2

  1. 6 oz finely chopped white chocolate
  2. 1 tbls unsalted butter
  3. 2 Eggs
  4. 1/3 cup Sugar
  5. 1/4 tsp Salt
  6. 1 tsp Vanilla Extract
  7. 1 1/2 cup chilled heavy whipping cream
  8. 1/2 cup Raspberries
  9. For Raspberry jelly
  10. 1/2 cup Raspberry
  11. 1 tbls brown sugar

Instructions

  1. To make the raspberry jelly heat the raspberry in small pan with sugar. Cook till you get a little thick consistency.
  2. Pour into small round mold. Freeze it for about 5-6 hours.
  3. For Semifreddo line a metal loaf pan with plastic wrap(leaving about 2 inch overhang). Keep in freezer until further use.
  4. In a bowl set over a pan of hot but not simmering water melt white chocolate, stirring occasionally, and remove bowl from heat.
  5. In another bowl, beat eggs with sugar to combine.
  6. Set bowl over a pan of simmering water and beat again until thick and pale. Continue beating over simmering water for about 3 minutes and remove from heat. Add white chocolate and vanilla extract. Beat again.
  7. In another bowl beat heavy whipping cream until it just holds stiff peak. Fold into egg mixture gently but thoroughly.
  8. Add raspberry in it and fold gently once.
  9. Pour mixture into prepared chilled pan. Cover pan with plastic wrap and freeze semifreddo at least for 6-8 hours.
  10. Unmold semifreddo onto a platter, discarding plastic wrap. Cut into your favorite shape.
  11. Garnish with frozen raspberry jelly on it. Serve and enjoy this amazing dessert today.
