  3. 1 pack of Rapid rise instant yeast(1 pack=2-1/4 tsp)
  4. 1 tbls sugar
  5. 1 tbls Kosher Salt
  6. 1/4 cup Herb olive oil ( To warm olive oil add some fresh Rosemary leaves and 1 clove of thin slices of garlic)
  7. For Topping
  8. 1/4 cup Herb olive oil( warm olive oil with Rosemary and sliced Garlic)
  9. 1/3 cup Caramelized onion
  10. 2 tbls Chopped roasted red bell-pepper
  11. 8-10 Round sliced tomatoes
  12. 2 tbls Olives
  13. 1-2 tbls Fresh rosemary
  14. 1/4 cup Shredded Parmesan cheese
  15. Freshly ground black pepper
  16. 1 tsp Kosher salt

Instructions

  1. Take warm water in a small bowl add yeast and sugar, stir it and let stand 3 minutes until foam appears.
  2. Take big mixing bowl and add bread flour in it.
  3. Pour 1/4 cup of herb olive oil(with herbs) and mix gently.
  4. Pour yeast water in it.
  5. Dissolve salt in 2 tbls water and add it to the mixture. Combine all together. Knead the dough. Knead until the dough is smooth and elastic, about 8-10 minutes.
  6. Turn the dough out on work surface and fold over itself a few times.
  7. Form the dough into a round and place in an oiled bowl, turn to coat the entire ball with oil so it does not form a skin. Cover with plastic wrap and let rise in a warm place until doubled in size, about 45-60 minutes.
  8. Coat the sheet pan with some herb olive oil(include some rosemary and garlic) and dust some dry flour on it.
  9. Stretch the dough out to oblong shape about 1/2 inch thick.
  10. Lay the flattened dough on the pan and cover with plastic wrap. Let rest for another 15 minutes.
  11. Preheat oven to 400 degrees F. Uncover the dough and dimple with your fingertips.
  12. Brush the surface with rest of herb olive oil with rosemary and sliced garlic.
  13. Top it with sliced tomatoes, chopped roasted red bell-peppers, olives, caramelized onions, some more rosemary petals, fresh ground black pepper, salt and Parmesan cheese. To make caramelized onions cook sliced onion with some olive oil and butter along with few drops of vinegar and some brown sugar for about 40-50 mins or until gets brown color on slow-medium heat.
  14. Bake on the bottom rack for 15-20 minutes.
  15. Enjoy the most amazing taste of Focaccia.
