Stir fried Kothu Parotta

Ingredients to make Stir fried Kothu Parotta

  • Parotta - 3
  • onion(chopped) - 1
  • egg - 1
  • tomato(chopped) - 1
  • ginger garlic paste - 1/2 tsp
  • Green chilli(chopped) - 1
  • Red chilli powder - 1 tsp
  • fennel powder - 1 tsp
  • Garam masala powder - 1/2 tsp
  • Any meat gravy - 2 tbsp (optional)
  • curry leaves (chopped) - 1 tsp
  • coriander leaves (chopped) - 1 tsp
  • salt as needed
  • oil

How to make Stir fried Kothu Parotta

  1. Shred the parotta into small pieces using a knife.If using a spice grinder,just pulse for two times.
  2. Add oil in a tawa and add onion and cook for few seconds.
  3. Add ginger garlic paste.Fry until raw smell disappears.
  4. Add half chopped tomato.Saute for few seconds.
  5. Add the chopped green chilli, salt, red chilli powder and fennel powder.
  6. Break open a egg and scramble it.
  7. Add the shredded parotta and if using meat gravy add it.
  8. Using a sharp spatula, stir fry and pound it occasionally under high heat.
  9. Drizzle in oil when it sticks to the pan.
  10. Add in garam masala, chopped curry leaves, coriander leaves and the remaining chopped tomato.
  11. Stir under high heat for few secs and serve hot with onion raita.

My Tip:

Adding shredded fried chicken takes the dish to a next level.

I tried this out with Poha instead of Parotta. I added pepper powder as well. It turned out to be too good!! My friends loved it too... Thank you so much for sharing this recipe!
