ABOUT Bhajia Pav (A lip smacking Mumbai street food) RECIPE

“Bhajia” in Mumbai language means chickpea/gram flour coated and fried fritters. Pav is the traditional Indian bun and when the Bhajia is sandwiched between two halves of a Pav generously spread with 2 types of mouthwatering chutneys, the result is unbeatable! Served with hot tea this snack is a favourite street food especially during the rainy season and the winter season in Mumbai when temperatures fall and hot cups of tea, coffee and hot chocolate are preferred over cool drinks!

Ingredients Serving: 4

  1. For the Bhajiyas
  2. 2 large Potatoes, peeled and sliced with a mandoline into thin rounds
  3. 1 big Onion, peeled and sliced into rounds
  4. 1/2 cup Chickpea flour/gram flour (besan)
  5. 2 tsp salt
  6. 2 tbsp rice flour
  7. 1 tsp turmeric powder (haldi)
  8. 1 tsp red chilli powder
  9. 1 tsp Coriander Powder (dhaniya)
  10. 2 tsp chaat masala
  11. Other Ingredients
  12. Oil for frying the Papad
  13. 1/2 cup Green Coriander Chutney
  14. 1/2 cup Maharashtrian Red chilli-Garlic Chutney (optional)
  15. 4 Pav buns

Instructions

  1. Make the fritters. Mix the besan with the rice flour, salt, turmeric powder, red chilli powder and coriander powder. Add enough water to make a batter of pouring consistency.
  2. Heat Oil. Dip each slice of potato and onion in the batter and deep fry on medium heat till golden brown and crisp. Keep aside and sprinkle chaat masala.
  3. Assemble the Bhajia Pav : Split each bun in half and spread green chutney on one side and the red chilli – garlic chutney on the other.
  4. Allow 4 to 5 Bhajias per serving.Stack the Bhajias one over the other alternating onion and potato on the base half of the Pav.
  5. Cover with the top and press lightly.Serve with hot tea!
