Ingredients to make Prawns consomme soup

  • Prawns 200 gm
  • Sweet lime 1
  • lemon 1
  • cloves 2
  • Black pepper 2-3
  • Celery stick half
  • White Wine 50 ml
  • carrot 1
  • tomato 1
  • Thyme 1 sprig
  • water 500 ml
  • White pepper powder, a pinch
  • salt

How to make Prawns consomme soup

  1. Clean and devien the prawns.
  2. Slice the sweet lime and lemon.
  3. Dice the prawns.
  4. Now take a heavy bottom pan. Add water and lemon slice, sweet lime slice, black peppercorn, celery stick , cloves and thyme. Simmer until the stock reduces.
  5. Cut carrot into thin triangle shape and de-seed tomato and cut into small dice.
  6. When stock comes to a boil add diced prawns , white wine and carrot. And tomato chutney cubes. Cook for 5 minutes.
  7. Now add salt and white pepper powder. In another pan add little oil and saute prawns head .
  8. Pour the soup in a bowl and garnish with prawns head.
