ABOUT SHAHEE KOFTA PULAV RECIPE

A great dish for your family and friends. As always the inspiration is my sister in law. A big thanks to her.

Ingredients Serving: 6

  1. Washed Rice 2 cups
  2. Boiled mashed potatoes 1 cup
  3. Few strands of Saffron
  4. Red Chilli Pd 1 tsp
  5. Turmeric pd 14 tsp
  6. Salt to taste
  7. Gram Flour/ Besan 4 tbsp
  8. Ginger Paste 1 Tsp
  9. Green Chilli paste 1 tsp
  10. Cornflour 1 tbsp
  11. Oil for frying
  12. Ghee 2 Tbsp
  13. Chopped onions 2
  14. Sliced Onions 2
  15. Ginger garlic paste 2 tsp
  16. Cinnamon Sticks 2-3
  17. Cloves 5
  18. Garam masala 1 tsp
  19. Salt to taste
  20. Medium size tomatoes 3
  21. Curd 1 cup
  22. Cashew Nuts Fried 1 tbsp
  23. Green peas 1/2 cup
  24. Red Chilli pd 1 tsp
  25. Cream or Beaten Malai 1 tbsp
  26. Coriander 1 tbsp
  27. Mint 1 tbsp
  28. Green chillies 3

Instructions

  1. Cook rice with salt, saffron & cream till 3/4 done.
  2. Fry sliced onions and spread nicely on tissue paper and keep aside.
  3. Fry cashew nuts and keep aside.
  4. Make paste of coriander, mint and green chillies.
  5. Mix all the ingredients of the koftas well. Make small balls of this mixture.
  6. Dust these balls with the cornflour.
  7. Deep fry these koftas in hot oil till golden brown.
  8. In another pan, heat ghee and put cinnamon and cloves.
  9. After few seconds put chopped onions. Saute till onions turn pink.
  10. Add ginger- garlic paste and saute for a minute.
  11. Add spices, red chilli pd, garam masala and salt. Saute for 30 seconds.
  12. Add coriander, mint and green chilli paste. Again saute for a minute.
  13. Now add tomatoes and saute till they become soft.
  14. Put curd to this mixture on low heat and keep stirring till it starts boiling.
  15. Add prepared koftas and fried cashew nuts. After a minute remove from the heat. Keep few koftas and cashews aside for garnishing.
  16. Take vessel of rice, pour kofta & curd mixture all over the rice.
  17. Garnish with fried onions, chopped coriander leaves and cashew nuts.
  18. Close it with a tight lid. Keep it on low flame for 10 minutes.
  19. Open the lid and stir the rice with light hands.
  20. Serve hot.
