ABOUT #Chillaquiles RECIPE

Chillaquilles is a Mexican food with crisp tortillas, crunchy veggies and spicy sauce. Here i have replaced corn tortillas with regular whole wheat chapati.

Ingredients Serving: 4

  1. Whole wheat chapatis 4
  2. Onions sliced 1 cup
  3. Bell peppers julliens 1 cup
  4. Cottage cheese 50 gms
  5. Processed cheese 25 gms
  6. Oil to shallow fry
  7. Salt 1/2 tsp
  8. Black pepper powder 1/4 tsp
  9. For red sauce
  10. Red tomatoes 2
  11. Garlic cloves 4-5
  12. Whole red chillies 4-5
  13. Salt 1/2 tsp

Instructions

  1. First prepare spicy sauce.
  2. Boil all ingredients of sauce for 5 minutes. Cool and blend to a fine paste of sauce consistency.
  3. Roll chapatis and cut into rounds of half inch thickness. This will give strips of chapati.
  4. Heat oil in a pan to shallow fry chapati strips. Fry till they are crisp.
  5. Remove excess oil from pan.
  6. Add thinly sliced onions and fry for a minute.
  7. Add bell peppers julliens with salt and pepper. Toss.( Use all three colour peppers)
  8. Add crisps, chopped green coriander leaves and crushed cottage cheese. Toss well.
  9. Plate it. Top with processed cheese and spicy sauce.
