This veg noodle soup has a light broth and is a very tasty and healthy dish.

Ingredients Serving: 2

  1. 1 tablespoon Olive Oil
  2. 1 large red onion cubed
  3. 2 spring onions chopped
  4. 2 large tomatoes cubed
  5. ½ pumpkin cubes
  6. ½ cup peas shelled
  7. 50 grams mushrooms sliced
  8. 3-4 cloves of garlic pounded
  9. 60 grams dry noodles
  10. 1 teaspoon ginger grated
  11. 6 peppercorns
  12. 2-3 cloves
  13. 2-3 cardamom
  14. 450 ml water
  15. 1 teaspoon freshly ground black pepper
  16. ½ teaspoon salt


  1. Heat the olive oil, saute the onions, ginger and garlic for a minute or two and add the spices.
  2. Saute for 2 minutes and add the tomatoes, peas and pumpkin, saute for two minutes.
  3. Add half the water, the pepper and salt. Cover and simmer for 10-12 minutes or till the vegetables are soft.
  4. Remove from heat, cool and blend, add the rest of the water, the noodles and the mushrooms, check seasoning and bring to a boil and simmer for another 4-5 minutes, till the noodles soften.
  5. Serve hot with a side of butter toast.
